INGREDIENTS
- ⅓ - ½ cup flour
- ½ cup white wine (optional)
- 2 cups chicken broth
INSTRUCTIONS
Toast Flour
In a skillet over low heat, dry toast the flour until it reaches a cashew-like color, making sure not to add any oil. Then set it aside.
Strain the Turkey Fat
Strain the drippings from the turkey pan using a fat separator. If you do not have a fat separator, you can also skim off the fat from the top using a spoon.
Making the Paste
In a small bowl, dilute the browned flour with water or broth until it forms a smooth paste.
Combine the Turkey Fat & Chicken Broth
In a saucepan over medium heat, combine the strained drippings with the chicken broth.
Thicken the Gravy
Gradually whisk the flour paste into the saucepan, stirring constantly. Stop adding the flour mixture once the gravy reaches your desired consistency.
Season the Gravy
Season with salt and black or white pepper to taste.
